Matcha is a finely powdered green tea that plays a major role in the Japanese tea ceremony. Only full shade tea is used for genuine, high-quality matcha. The tea plant is grown in around 90% shade for 14-28 days before harvesting. In the past, the tea plant was covered with natural reeds to protect it from snow. Nowadays, black tarpaulins are used to reduce sunlight by 85% to 95%.
